5 of 6 people found the following review helpful. Extremely disappointed By luvcupcakes I ordered this book with great excitement, which quickly turned to great disappointment. My first attempt was the Vanilla cake. I was very surprised this cake recipe called for 11 eggs. Eleven!! Six whole eggs, plus 5 egg whites. Since we love vanilla cake I felt it was worth a try. After purchasing natural butter flavor, granulated erythritol, and nonfat greek yogurt to name a few of the ingredients, I set to work making this cake. The steps were easy enough and it looked good in the process. After baking it for 60 minutes as specified, it looked like it was going to be pretty good. Once the cake cooled in the pans as instructed, I then set about removing the cakes. The first cake came out okay, but as stated, it is a delicate cake so some pieces of the cake fell apart. I then tried to frost it with the chocolate frosting (also in the book), but the frosting was so darn thick that I had to thin it out in order to frost the cake which was falling apart with every scoop of frosting. The chocolate frosting did not taste good on its own, but I hoped by pairing it with the vanilla cake it would shine. I then attempted to place the second cake on top of the other and major pieces of it fell apart. By this time, I was just slapping on the frosting and no longer cared how the cake looked. If it tasted good who cares how it looks especially for my first try. I took one bite of this cake and immediately knew this was not going to be acceptable. I then had my husband taste it and he suggested I throw the entire thing out and try another recipe. What a waste of ingredients - almost a dozen eggs down the drain along with the expensive erythritol. This cake had the consistency of a pound cake and I cannot describe the taste as it was just awful. I don't know if it was the erythritol and if that is an acquired taste?The following day I pulled the book out to try the chocolate chip cookies. That was fast and easy to put together, however, the batter came out like pancake batter rather than cookie batter. I tried adding a bit more oat flour but knew that would be changing the composition of the flavor. The instructions state to roll the dough in your hands and flatten it. Well, if it's like pancake batter it's already nice and flat. I did not waste any of my newly purchased sugar-free chocolate chips since to this point the batter was not correct. I took a sample taste and knew this batter was not going to magically transform into something delicious out of the oven. I ended up tossing this in the disposal.I'm very disappointed in this cookbook. I came to read reviews to see if anyone else had anything to say about the recipes and no one has really stated anything except "I'm going to give these recipes a try" or "this is the way I bake so I'm excited" words to that effect. I hope in the future reviewers will be more specific as to which recipe was successful for them. Again, I wonder if baking with erythritol is an acquired taste? Jessica of this blog seems like a very nice person and I hate to give such a negative review. I will not be baking anymore from this book and have placed this book for sale.I wanted to try the nutella recipe, but I think I'll pass. Vegan Corner on youtube has an excellent nutella recipe that I'll stick with.
